Tofu Vegetable Fried Rice
2 bowls of tofu-vegetable fried rice, each with half the complete skillet · Active 40 min · Total 1 hr 5 min
Print recipe · PDFFried rice works best here with a deliberately cooked and promptly chilled rice batch, not an untracked takeaway carton. Tofu, egg, carrot and peas make it a complete meal with a measured soy finish. The beginner lesson is preparing the ingredients before heating the skillet and adding them in stages. Once this chilled rice is reheated, the finished meal is for immediate eating rather than another cycle of cooling and storage.

Start with rice whose history you know
The base uses cooked long-grain white rice that was spread into shallow portions and chilled quickly, ideally within one hour of its original cooking. Keep it refrigerated and use it within twenty-four hours of that original time. This matters more than achieving perfectly separate grains. Break cold clumps apart with a fork while they are still in the container; trying to crush a solid block in a hot pan can leave cold centers. The stated meal time does not include cooking and chilling a new rice batch.
Give each stage a clean place to wait
Cook the beaten eggs first to a set scramble and move them to a clean plate. Brown dried tofu in the skillet, then move it beside the cooked eggs. That creates space for onion and carrot to soften rather than crowding everything into the pan at once. Cook frozen peas fully as their packet directs before the final mix. Keep raw beaten egg and its bowl away from the cooked components. The same plate can hold safely cooked tofu and egg during the brief vegetable stage; it must not be the unwashed bowl used for raw egg.
Finish once and serve now
Add rice only after the vegetables are tender, then fold the tofu, cooked peas and egg back through. Stir and turn until every part reaches the leftover reheating endpoint, checking more than one place. A little soy sauce coats the grains; it is not a deep pool of bottled sauce. Divide the whole skillet between two bowls and eat promptly. Because the base rice has already had its one reheating, do not save the finished fried rice for another reheating tomorrow. The estimate uses cooked rice weight and includes all the measured oil.

Make it
- Confirm the rice was promptly chilled after cooking and is still within its original 24-hour refrigerated window. Break up cold clumps with a clean fork and keep refrigerated until needed. Cook frozen peas fully to their packet instructions and drain; do not merely thaw them.
- Heat 1 teaspoon (5 ml) oil in the skillet over medium heat. Add beaten eggs and stir for 2–3 minutes until fully set and 160°F/71°C. Transfer to a clean plate, not the raw-egg bowl.
- Add another teaspoon (5 ml) oil. Cook dried tofu cubes for 7–9 minutes, turning occasionally, until lightly golden and hot throughout; follow any longer product cooking instructions. Transfer beside the cooked egg. Add the final teaspoon (5 ml) oil, onion and carrot and cook for 7–9 minutes until tender. Add garlic and ginger for 30 seconds.
- Add the cold rice and stir-fry for 3–4 minutes, breaking remaining clumps gently. Return tofu, egg and cooked peas; add soy sauce and green onion. Continue stirring and turning for 3–5 minutes until the complete mixture reaches 165°F/74°C throughout, checking several places.
- Divide all fried rice between 2 bowls and eat immediately. Discard uneaten finished portions rather than cooling for another reheating.
A useful kitchen skill
Prepare a clean holding plate for cooked components, break chilled rice clumps before heating and count the rice’s reheating only once.
A useful detail
The base starts with 300 g cooked, promptly chilled rice, not 300 g dry grain. The 65-minute total excludes its earlier cooking/chilling but allows vegetable prep and staged skillet work. Finished fried rice has used the rice’s one reheating.
Another way
- Replace peas with 100 g drained canned sweetcorn, heating it with the finished mixture to 165°F/74°C and using the canned-corn estimate.
- Use 15 ml suitable labeled tamari instead of ordinary soy sauce if appropriate for your ingredients; check every label rather than making a blanket allergen-free claim.
Keep it well
Keep ingredients refrigerated until their cooking stage. Once the chilled rice has been reheated in this recipe, eat immediately and discard uneaten finished fried rice. Do not refrigerate it for another reheat. For a smaller meal, cook half the base quantity from the start, keeping the same original rice clock and endpoints.
