Crisp Chickpea and Rosemary Snack Mix
4 small snack portions · Active 10 min · Total 55 min
Print recipe · PDFChickpeas roasted with rosemary become a savory snack with crisp edges and a tender center. The important work is drying them before they meet the oven. This recipe is not a commercial shelf-stable snack, and the finished chickpeas should be refrigerated after cooling. A brief return to a hot oven refreshes their texture if you prefer to eat them warm before leaving.

Surface moisture is the obstacle
Drain and rinse the chickpeas, then spread them on a clean towel and pat thoroughly dry. Loose skins can be removed, but there is no need to peel every chickpea. Leave space on the tray so steam escapes. A deep dish or crowded pile traps moisture and produces soft beans instead of the roasted edges you are looking for. Shake the tray only once or twice so the chickpeas have time in contact with the hot metal.
Season without burning the herb
Dried rosemary is used here because fresh leaves can darken quickly during the roast. Crush it between your fingers so there are no long sharp needles. Garlic powder and smoked paprika go on near the end with a small touch of oil, reducing the chance of scorched spices. Let the chickpeas cool in a single layer rather than sealing them while warm.

Make it
- Heat the oven to 425°F/220°C. Dry the chickpeas thoroughly on a clean towel.
- Toss chickpeas with 1 1/2 teaspoons oil, rosemary and salt. Spread in a single layer on the baking tray.
- Roast for 25 minutes, shaking once halfway through. Mix remaining 1/2 teaspoon oil with garlic powder and smoked paprika, drizzle over and toss carefully.
- Roast for another 8–10 minutes until the outsides are golden and crisp in places. Cool in a single layer on the tray.
- Eat a portion once cool enough, then refrigerate remaining chickpeas promptly in a shallow covered container.
A small crunchy component
Pack a chilled portion in a shallow snack pot beside other cold food. For a shelf-stable snack during a shift without refrigeration, choose a commercially packaged product labeled for that storage rather than assuming homemade roasted beans behave the same way.
A useful detail
Canned chickpeas vary in size and moisture. Check the tray near the end and remove very small dark pieces before they become bitter.
Another way
- Use dried thyme instead of rosemary.
- Replace smoked paprika with ground cumin for a different savory finish.
Keep it well
Refrigerate within 2 hours, or 1 hour above 90°F/32°C, at 40°F/4°C or below for up to 3 days. They soften during storage; refresh on a tray at 400°F/200°C for 5–8 minutes if desired. This homemade recipe is not a shelf-stability process.
