Mushroom and Chestnut Pot Pie
6 portions Active 35 min Total 1 hr 40 min
Mushrooms and chestnuts make a pot pie with two very different textures: tender, savory mushrooms and soft pieces of chestnut that almost crumble into the sauce. A ready-made puff pastry lid keeps the construction manageable and gives the dish a dramatic golden top. Buy peeled, cooked chestnuts rather than raw chestnuts in their shells; their preparation would need a separate process. The filling is fully cooked before assembly, then allowed to cool slightly so it does not melt the pastry before the pie reaches the oven.

Brown mushrooms in a broad pan
A full pound of mushrooms looks like a lot, but it shrinks as the moisture evaporates. Use a broad skillet and let the liquid cook away before adding the flour. Stirring occasionally is useful; stirring constantly can stop the mushrooms from staying against the pan long enough to color. The resulting brown edges give the mild sauce its depth without needing wine or a strong seasoning blend.
Handle chestnuts gently
Vacuum-packed cooked chestnuts usually come out in a mixture of whole pieces and fragments. Break the largest ones into two or three pieces, but keep them broad enough to notice in the filling. Fold them in once the sauce has thickened rather than frying them with the mushrooms. They are already cooked and only need warming. Check the package for plain chestnuts without a sweet glaze or savory seasoning.
A lid that can rise
Cool the filling for fifteen minutes before laying on the pastry. It should be warm, not sending up heavy clouds of steam. The pastry needs a few small vents, but avoid a large central hole that would expose too much filling. Brush the egg wash lightly over the top, keeping it off the cut pastry edges where it could seal the layers together. Rest the finished pie briefly before breaking through the lid with a serving spoon.

- 1 medium yellow onion, finely chopped
- 1 medium carrot (about 3 oz / 85 g), finely diced
- 1 lb (450 g) cremini mushrooms, thickly sliced
- 3/4 teaspoon kosher salt
- 1 teaspoon fresh thyme leaves
- 3 tablespoons all-purpose flour, plus a little for rolling
- 1 1/2 cups (360 ml) low-sodium vegetable stock, explicitly without chili or pepper
- 1/2 cup (120 ml) heavy cream
- 7 oz (200 g) peeled, cooked chestnuts, roughly broken
- 1 sheet all-butter puff pastry (about 8–9 oz / 225–255 g), thawed according to its package
- 1 large egg, beaten with 1 teaspoon water

Large broad skillet, 2-quart shallow baking dish, Small bowl, Pastry brush, Rolling pin
Allergens
Milk, wheat, egg. Check ingredient labels and substitutions.
Make it
- Heat the oven to 400°F (200°C). Melt the butter in the skillet over medium heat. Add the onion and carrot and cook for 6 minutes.
- Add the mushrooms, salt, and thyme. Cook for 10–12 minutes, stirring occasionally, until the mushroom liquid has evaporated and the edges begin to brown.
- Stir in the measured 3 tablespoons flour for 1 minute. Gradually add the stock, then the cream. Simmer for 4–5 minutes until thick enough to coat a spoon. Fold in the chestnuts.
- Transfer to the baking dish and let cool for 15 minutes. The filling should still be warm but not steaming heavily.
- On a lightly floured surface, roll the pastry just large enough to cover the dish with a 1/2-inch overhang. Lay over the filling, press the edges onto the rim, and cut 3 small vents in the top. Brush lightly with the beaten egg, avoiding the cut edges. Discard unused egg wash.
- Bake for 25–30 minutes until the pastry is well risen, golden, and cooked through, with bubbling filling visible at the vents. Cover loosely if the top browns too quickly.
- Rest for 5 minutes before serving.
A useful detail
Puff pastry brands vary; check their labels for milk, egg, soy, or other allergens beyond those in the plain all-butter version used here. Chestnuts can also cause individual allergies even though they are no longer classified by FDA as a major tree-nut allergen.
Make it your own
- Replace half the cremini mushrooms with sliced oyster mushrooms for a different texture.
- Use 2 teaspoons chopped fresh sage instead of thyme.
Keep it well
Refrigerate shallow portions within 2 hours, or 1 hour above 90°F (32°C). Keep at 40°F (4°C) or colder for up to 4 days. Reheat the center of each portion to 165°F (74°C), covering loosely if the pastry browns.
