A little kitchen know-how
Build flavor gently.
Mild food has plenty to say. These recipes lean on roasting, browning, herbs, texture, and a little brightness rather than chili heat.
What “without the chili heat” means here
The recipes omit chili peppers, hot sauces, pepper flakes, black and white pepper, hot mustard, and horseradish. Sweet bell peppers appear in a few dishes; they bring sweetness rather than chili heat. Choose pepper-free broth and plain products where specified. Check labels, especially seasoning blends and sauces. This is a flavor preference, not a medical diet or allergy guarantee.
Read, measure, then cook
Read the full method and set out the right pan before starting. US cups and spoons are level measures. Use the listed metric weights when supplied. Total times include specified resting, chilling, or rising; kitchen pace and equipment can change them. Doneness cues and thermometer readings take priority over the clock.
Clean hands, cool leftovers
Wash hands and produce, separate raw animal foods from ready-to-eat ingredients, and use clean utensils. Cook poultry and casseroles to 165°F/74°C, ground beef and pork to 160°F/71°C, intact beef and pork cuts to at least 145°F/63°C with a three-minute rest, fish to 145°F/63°C, and egg dishes to 160°F/71°C. Use a food thermometer.
Refrigerate perishable leftovers promptly in shallow containers, within two hours, or within one hour above 90°F/32°C. Keep the refrigerator at 40°F/4°C or below. Follow each recipe’s shorter storage guidance. Reheat savory leftovers to 165°F/74°C. Keep hot food hot and cold food cold when serving.
Make substitutions thoughtfully
Milk, eggs, wheat, soy, fish, shellfish, sesame, peanuts and tree nuts are identified where present in the base recipes. Ingredient brands and substitutions can change allergens. A replacement also changes flavor and texture; follow the specific variations before making broader changes.
