Maple Turkey Meatloaf with Oat Crust
1 loaf, 6 slices Active 20 min Total 1 hr 30 min
A turkey meatloaf needs moisture in the mixture and a little character on top. Rolled oats do both jobs here: some soak in milk for the interior, while the rest form a lightly maple-glazed crust. Finely grated carrot and onion disappear into the loaf rather than leaving hard vegetable pieces. The glaze is deliberately thin, just enough to make the oats golden and slightly sticky. Shape the loaf on a rimmed baking sheet so its sides can brown and its juices stay contained.

Oats in two textures
Old-fashioned rolled oats soften during their soak and give the ground turkey a gentle structure. Instant oats behave differently, and steel-cut oats will not soften enough in this recipe. Reserve the dry topping oats before mixing the filling. The crust should be a thin scattering, not a thick layer that shields the meat from the oven or falls away when you slice.
Shape for even cooking
A low loaf cooks more evenly than a tall compact mound. Aim for the dimensions in the method and smooth the sides without packing the mixture down hard. Use a thermometer in the center rather than judging by a clear-looking juice. Resting for ten minutes gives the loaf time to settle; a serrated knife then cuts through the oat crust with less dragging than a blunt chef’s knife.

Make it
- Heat the oven to 375°F (190°C). Line the rimmed baking sheet with parchment. Mix 1/2 cup oats with the milk in the large bowl and let stand for 5 minutes.
- Add the turkey, egg, carrot, onion, thyme, and salt. Mix gently with clean hands or a fork just until evenly combined.
- Transfer to the baking sheet and shape into a loaf about 9 inches long, 4 inches wide, and 2 inches high. Do not pack tightly.
- Mix the maple syrup, vinegar, oil, and remaining 1/4 cup oats in the small bowl. Spread in a thin layer over the top of the loaf.
- Bake for 50–60 minutes, until the center reaches 165°F (74°C). If the topping browns early, tent loosely with foil for the remaining time.
- Rest for 10 minutes before transferring to a board and cutting into six thick slices.
A useful detail
The loaf can remain slightly pink even after reaching a safe temperature. Rely on the thermometer reading in the center rather than color.
Make it your own
- Use ground chicken instead of turkey and cook to the same 165°F (74°C) minimum.
- Replace the dried thyme with 2 teaspoons chopped fresh sage.
Keep it well
Refrigerate slices in shallow containers within 2 hours, or 1 hour above 90°F (32°C). Keep at 40°F (4°C) or colder for up to 4 days, or freeze for up to 2 months. Reheat to 165°F (74°C).
