Roasted Sweet Potato and Black Bean Rice Bowls

4 main-course bowls Active 25 min Total 55 min

Sweet potatoes, black beans, and brown rice make a colorful bowl without depending on chili seasoning. The potatoes roast until their edges brown, while lime and a little honey brighten the beans. A spoonful of yogurt and chopped cilantro finish each serving. Keep the ingredients in visible sections rather than tossing everything together; the orange cubes, dark beans, and tan rice make the meal interesting before the first bite. Each component has a different texture, too.

Choose a quick-cooking plain brown rice

Plain quick-cooking brown rice keeps this bowl within its stated time. It is different from a seasoned microwave pouch or an instant mix, which may contain pepper, chili, or more salt than intended. Follow the package’s water ratio and cooking time for one cup of dry rice. If you prefer standard brown rice, start it first and allow its longer schedule. The rest of the bowl can wait briefly while the grain finishes.

Browned edges replace a spice crust

Half-inch sweet potato cubes have enough surface area to caramelize in a hot oven. Dry them after peeling and spread them widely on the tray. A crowded pan gives softer, paler potatoes. The beans only need warming; a hard boil can split them and turn the lime dressing cloudy. Add the lime juice after they come off the heat. The yogurt stays plain, offering a cool contrast rather than another sauce to prepare.

Keep a bowl useful for tomorrow

For advance preparation, pack the rice, beans, and potatoes in separate shallow containers and chill promptly. That makes reheating more even and lets you leave the yogurt cool. Rice should not wait in the warm saucepan while you finish cleaning the kitchen. A little extra water in the bean container helps restore its glossy coating when reheated without requiring another batch of dressing.

Make it

  1. Heat the oven to 425°F/220°C. Toss the sweet potato cubes with 1 tablespoon oil and 1/2 teaspoon salt on a rimmed tray. Roast for 25–30 minutes, turning once, until tender with golden edges.
  2. Cook the brown rice in a saucepan using its package water ratio and timing. Let stand covered for the package rest time, then fluff.
  3. Combine the beans, remaining tablespoon oil, water, and remaining 1/4 teaspoon salt in a small saucepan. Warm over medium-low for 6–8 minutes, stirring gently.
  4. Take the beans off the heat and stir in the lime juice and honey.
  5. Divide the rice among 4 bowls. Arrange the sweet potatoes and black beans in separate sections over the rice.
  6. Spoon a little yogurt onto each bowl, scatter with the cilantro, and serve warm.

A useful detail

If your rice takes 40–45 minutes rather than 10–20, the total recipe time increases accordingly. Do not replace plain rice with a seasoned blend without checking every ingredient.

Make it your own

  • Use parsley instead of cilantro if you prefer its flavor.
  • Replace the yogurt with a dairy-free plain yogurt, checking its label for soy or tree nuts.

Keep it well

Spread cooked rice into a shallow container and refrigerate promptly within 2 hours at 40°F/4°C or below; do not leave it in the warm saucepan. Store rice, beans, potatoes, and yogurt separately for up to 3 days. Reheat the cooked components to 165°F/74°C before assembling.
