Salmon Fillets with Warm Cucumber Lentils
2 plates, each with 1 salmon fillet and half the warm cucumber-lentil mixture · Active 25 min · Total 55 min
Print recipe · PDFCucumber is usually served cold, but a very short turn in a warm pan gives it a different role. It joins tender lentils just before serving, so it stays recognizable rather than becoming a watery stew. Salmon cooks separately in the skillet while the lentils finish in a saucepan. The recipe starts with dry whole lentils and raw fish, making both cooking stages explicit.

Let the lentils set the pace
Use whole green or brown lentils for this dish. Split red lentils dissolve and make a different texture. Sort and rinse the dry pulses, then simmer gently until their centers are tender. Start checking near the shorter packet time, but allow longer if they remain chalky. Drain thoroughly and keep them covered while the fish cooks. The small dry quantity expands enough for two substantial lentil portions; water absorption does not mean that a matching weight of dry and cooked lentils can be exchanged.
Keep the cucumber brief
Cut the cucumber into small half-moons with its skin left on. Add it only after the onion has softened, then turn for about a minute before folding in the warm lentils. This warms the vegetable while keeping a little bite. Lemon and dill go in near the end, where they can remain distinct. For the salmon, dry the surface with a clean paper towel and lower it carefully into the hot oil. Leave the first side undisturbed until it releases more easily; forcing a spatula underneath can tear the flesh. Check the thickest part reaches 145°F/63°C, then move it with a broad spatula to a clean plate. Divide the lentils and cucumber equally, including the measured oil and lemon. There is no need for an extra sauce or garnish to make the plate complete.

Make it
- Sort and rinse lentils. Put them and the water in the saucepan, bring to a boil and simmer gently for 20–30 minutes, or the packet time, until tender through the centers. Add drinking water if needed to keep submerged. Drain well and cover off the heat.
- Near the end of the lentil cooking, pat salmon dry, season with half the salt and the pepper and clean raw-fish equipment and hands. Heat 1 teaspoon/5 ml oil in the skillet over medium heat. Cook salmon for about 4–5 minutes on the first side and 3–5 minutes on the second, depending on thickness, until the thickest part reaches 145°F/63°C. Transfer to a clean plate.
- Add the remaining 1 teaspoon oil and onion to the skillet and soften for 4–5 minutes over medium-low heat. Add cucumber and turn for 1 minute, then fold in the drained warm lentils, lemon, dill and remaining salt. Warm for 1–2 minutes without stewing the cucumber.
- Divide the warm lentil mixture between 2 plates and set one cooked salmon fillet on each. Serve promptly.
A useful kitchen skill
Judge two ingredients independently: lentils need tender centers, and salmon needs its own safe center temperature. One ingredient finishing early does not make the other ready.
A useful detail
The 55-minute total allows the salmon to cook while lentils finish, then a short cucumber finish. Lentils can take longer with age. The estimate uses 100 g dry lentils and raw farmed Atlantic salmon, not equal cooked weights or a different fish species.
Another way
- Use 300 g raw rainbow trout fillets instead of salmon, checking 145°F/63°C and calculating for trout.
- Replace the cucumber with 200 g diced courgette/zucchini, cooking it for 4–6 minutes until just tender rather than using the cucumber’s 1-minute warm-through.
Keep it well
Refrigerate leftovers promptly in shallow containers at 40°F/4°C or below within 2 hours, or 1 hour above 90°F/32°C. Use within 2 days. Reheat only the needed portion to 165°F/74°C throughout; the cucumber will soften further on reheating. Do not keep fish warm at room temperature while waiting for lentils.
