Black Bean Rice Lunch Salad
This is a cook-ahead lunch salad, with the grown-up in charge of rice, hot water and the bean can. Once the rice is thoroughly chilled, the young cook can fold in beans and pepper with a mild lime dressing.

Before you begin · grown-up check
The grown-up cooks and chills the rice, checks its temperature, opens and rinses the beans and chops the pepper.
- Together wash hands with soap and water and clean the work surface.
- Adult checks ingredient labels, equipment and task suitability; ages are starting guides, not a guarantee of readiness.
- Adult handles all stove, can, knife and chilling-temperature tasks; the child mixes only fully chilled ingredients.
Ages are a starting guide. A grown-up checks your readiness and stays nearby. Follow the actor label on every step.

The skill you’re learning
Warm rice can warm everything mixed into it. Chilling it first keeps a cold salad cold and lets the grains separate instead of becoming a sticky clump.
Try one change
Replace the yellow pepper with the same amount of red pepper, chopped by the adult.
Serving & storing
Refrigerate covered at 40°F or below within 2 hours of preparation (1 hour above 90°F); use within 1 day. For a packed lunch, use an insulated lunch bag with two cold sources and keep chilled until eating; discard uneaten packed portions after lunch. The storage clock starts when the rice is cooked; the total time includes an estimated chill.
