The Classic Ramen Spread
About 15 minutes, estimated · 2 portions · Hot water

Documented technique; original recipe adaptation
A good spread has more than salt and heat: it needs soft noodles, a substantial filling, and something that still crunches. This version keeps the chips out until the last moment, so the bowl has three distinct textures rather than one heavy paste.

Make it
Equipment: Heat-safe bowl or mug; clean spoon; measuring cup and spoons; safe hot-water source. Use the cooking equipment required by the product label.
Ingredients
- 2 packages instant ramen, 3 oz each
- 3 cups boiling water
- 1/2 cup ready-to-eat refried beans
- 2 oz fully cooked shelf-stable summer sausage, diced
- 2 tbsp shelf-stable cheese sauce
- 1/2 cup corn chips, lightly crushed
- 1/4 of one ramen seasoning packet
Method
- Prepare both ramen blocks with the listed boiling water using the package method and equipment; if the label calls for cooking rather than standing, complete that cooking step. Keep a heat-safe bowl large enough to stir without spilling.
- Drain carefully, first reserving 1/4 cup cooking liquid. In the mixing bowl, stir the refried beans, cheese sauce and one quarter of one seasoning packet with 2 tablespoons of that liquid until loose enough to fold.
- Add the noodles and diced fully cooked sausage. Fold with a spoon, adding the remaining reserved liquid a tablespoon at a time only if the mixture feels dry. Aim for coated noodles rather than broth.
- Divide between two bowls. Scatter the lightly crushed corn chips on top immediately before eating; do not stir them into the resting bowl.
The useful detail
Crush chips to pea-sized pieces; powder disappears into the sauce.
When the store is different
Use ready-to-eat chicken instead of sausage, or double the beans.
